The combination of tart raspberry chips and crunchy pistachios is surprisingly perfect — the white chocolate chips tie it all together without being too sweet. I ate two in one sitting and already ordered more.
I was skeptical about fruit in a cookie, but the Valrhona raspberry chips add just the right tartness to balance the sweet white chocolate. The pistachios give it a nice crunch too.
The pistachio crunch with each bite is such a nice contrast to the soft cookie and sweet raspberry chips. I love that it uses Valrhona chocolate, the flavor feels really premium.
