Vegan & GF Chocolate Chip Walnut

I was skeptical a gluten-free cookie could have that chewy, bakery-style texture, but these nails it. The walnut chunks give it a nice crunch against the melty vegan chocolate chips, and the cashew butter base makes it taste surprisingly rich. I've already eaten three in one sitting.

These are the first chocolate chip cookies I've found that don't taste like a compromise. The walnut chunks stay properly crunchy and the cashew butter gives it that rich, almost old-fashioned cookie texture. Even my non-vegan husband grabbed two before I could hide the bag.

The cashew butter really delivers—it’s so creamy you’d never guess this cookie is vegan and gluten-free. I ate two straight out of the box and the semi-sweet chips balanced the walnuts perfectly.
